The blacksmith can't help it. He knows when Jack is lying. It's an automatic reaction. :-P

But he isn't lying! Just give him a day and he'll have comandeered that ship and another three to pick up a crew in Tortuga. Okay, so he doesn't do too much pillaging, but he's been a busy man. Give him time. Has he ever given us any reason not to trust him?

Will has three words for Jack: Lying. By. Omission.

It's a formula: lying by omission + Will's hide on the line + hinting that Will is stupid = oar upside the head

(Of course, this doesn't mean Will won't eventually end up in the Captain's bed or in a position to beat the shit out of anyone else who tries to smack Jack. It's just going to take some, er ... convincing to get there. Heh heh.)
